Ginisang Repolyo with Chicken

Ginisang Repolyo with chicken is a Filipino cabbage dish. Ginisang literally means sauteed and repolyo is the word for cabbage.
I love making cabbage dishes now, which is saying a lot, because when I was a child, I was a picky eater. Cabbage was one of those foods I refused to eat. I simply didn’t know better at that age.
Cabbage is such a superfood, full of vitamin K and vitamin C. It also aids in reducing inflammation. Cabbage is also a source of fiber and it helps supporting gut health. It is one of those foods that needs to be a regular part of a person’s diet.
Cabbage is one of those foods that you can enjoy in various forms and is found in a variety of national cuisines. There is the fermented cabbage of Korea in the form of kimchi. There is the German cabbage, sauerkraut. The Irish are famous for their corned beef and cabbage and the Filipino likes their ginisang repolyo.
Though this dish can be paired with various meats, I prefer adding boneless chicken breasts because of its high protein content. Below are the contents of the recipe.
Ingredients:
1 large cabbage
3 pounds boneless, skinless chicken breasts
1 cup chicken broth
2 carrots chopped
2 celery stalks chopped
1 green pepper
1 red bell pepper
3 tablespoons oyster sauce
1 onion
2 tablespoons of minced garlic
2 cups of water
salt and pepper to taste
oregano
garlic powder
basil
3 tablespoons olive oil
Instructions:
1. Heat oil in pot and sauté onions and garlic. This is the typical start to most Filipino dishes. Onions are garlic is the basis of the Filipino cuisine.
2. Add all three pounds of chicken until it turns light brown. Keep an eye on it, flipping the meat to make sure it is fully cooked.
3. Add 1 cup of water and broth and bring everything to a boil.
4. Add oyster sauce, cabbage, carrots and celery and sauté for 5 to 10 minutes.
5 add remaining water, bell peppers, and seasoning and allow to simmer for 10 to 15 minutes.
Once you’re done you will have a healthy, tasty dish. This recipe makes about 10 servings at 284 calories a serving. The macros for this dish are per serving: Fat 12.2g, carbs 15.3g, and protein 31.9g.
